Banana Bread

3 cups sugar

1 cup shortening

4 eggs

2 tsp. vanilla

1-1/2 cups buttermilk

2 tsp. baking soda

4 cups flour

3 mashed bananas (as ripe as possible--they should be WAY past the point where you would eat them, a brown spot or two isn't going to do it)

1 cup chopped nuts (optional)

Cream sugar and shortening. Add eggs one at a time. Mix well. Add vanilla. Combine soda and buttermilk. Alternate adding buttermilk mixture and flour. Begin and end with flour. Add bananas and nuts. Bake in well greased and floured fluted Bundt pan (recommended), tube pan or two eight inch loaf pans at 300 degrees for 1 hour, 40 minutes to two hours. Cool for 45 minutes before turning out on rack.
