Chocolate Lover's Cookies

2-1/2 sticks butter, softened

2 cups sugar

2 eggs

2 tsp. vanilla

2 cups flour

3/4 cup cocoa

1 tsp. baking soda

1/2 tsp. salt

2 cups semi-sweet chocolate chips
(may substitute peanut butter, butterscotch, mint, or white chocolate chips.)

Preheat oven to 350 degrees. Cream butter and sugar in a large mixing bowl. Add eggs and vanilla; blend well. In a separate bowl, combine flour, cocoa, baking soda, and salt. Gradually blend into creamed mixture. Stir in chocolate chips. Drop by teaspoonfuls onto ungreased cookie sheet. Bake for 8 to 9 minutes. Do not overbake. Cookies will be soft; they will puff while cooking and flatten when cooled. Cool on cookie sheet until set, about 1 minute, and remove to wire racks to cool completely. Sprinkle with powdered sugar, if desired.

Yield: 4 dozen.
