Cream Pie

2 cups milk

3 eggs

1/4 tsp. salt

1/2 tsp. vanilla

3/4 cup sugar

1/3 cup flour

2 tbsp. butter

1. Scald milk in top of double boiler.

2. Combine sugar, flour, and salt in mixing bowl.

3. Separate egg yolks and whites.

4. Beat egg yolks.

5. Add combined dry ingredients to beaten egg yolks, creaming well.

6. Add scalded milk, stirring.

7. Cook in double boiler until thick.

8. Add butter and vanilla.

Variations:

Coconut: Add 1 cup grated coconut to filling. Sprinkle some on meringue before baking.

Pineapple: Substitute 1/2 cup pineapple juice for 1/2 cup milk. Add 1/2 cup drained
pineapple to cooled filling.

Lemon: Substitute juice of 2 lemons for 1/2 cup milk. Add 1 tsp. grated rind.
Increase flour by 2 tbsp.

Banana: Add 2 chopped or mashed banana to filling with several dashes of nutmeg.
Chocolate: Add 4 level tbsp. cocoa to the sugar when mixing.

All of these pie fillings also make a good cup of pudding...just don't thicken it quite as much.
