Shortbread Cookies

2 sticks butter, softened

3/4 cup sugar

2-1/2 cups flour

Preheat oven to 300 degrees. Cream butter and sugar in a large mixing bowl with an electric mixer. Add flour gradually until well mixed. Pat dough into a large ball and place in plastic wrap. Chill 30 minutes to an hour in refrigerator. Roll out 1/3 of dough, using cloth jacket on rolling pin. Roll dough to 1/4 inch thickness. Cut cookies with a cookie cutter. Place cookies close together on an ungreased cookie sheet. Bake approx. 20 minutes. Cookies should be barely browned on bottom and white on top. Cool on wire racks.

Yield: 5 dozen.
